Ready for another secret chef recipe? How about Pumpkin Mouse? Many guest have raved about this recipe and have requested how to make it, so here we go.
Chef Mo and the Dunes Village Resort is happy to share the awesome recipe with us for everyone to enjoy. Are you ready to begin.
1/12 cup of heavy cream
3 large eggs separated
1 cup of pumpkin puree
1 to 1 ½ cups of confection sugar
4 tbsp of cinnamon
1 tsp of nutmeg
This recipe will yield 4-6 servings
First, you will need 3 separate bowls, an electric mixer, and a rubber spatula. In one bowl pour in 1 cup of heavy cream, add the powdered sugar, 1 cup depending how sweet you prefer, then add the 3 egg whites. Whip for about 8 minutes until you have the consistency of a heavy whip cream. When completed you will want to refrigerate immediately.
Next, in the 2nd bowl blend the pumpkin, 1/2 cup of whip cream, 3 egg yolks, cinnamon, 1/2 cup of sugar and nutmeg. Blend these until they have a pudding like consistency.
Finally, in the 3rd bowl mix both the whipped cream and pumpkin mixture together by gently folding in the layers together until completely blended.
If you are not using a piping bag place the mousse in the preferred serving dish and allow to set for 2 hours refrigerated before service. If using a piping bag allow mousse to set for 2 hours before piping into preferred serving containers.
A great way to serve is in a martini glass with a sugar and cinnamon ringed top. To do this, take the ring of the glass and coat with maple syrup or simple syrup, then dip the rim of the glass into the sugar mixture.
Now it is time to serve and enjoy your finished pumpkin mouse.
